“The
Real Deal” Guacamole
This recipe is from an old authentic Mexican restaurant in New York City
Here’s What You Need:
3 to 4 ripe
avocados, preferably Haas (they will still be firm, but will give easily when pressed)
½ ripe lime
(the smoother the skin the better)
½ clove
garlic, minced (optional)
½ small
shallot, minced (optional)
½ small jalapeño,
minced (save a few seeds for heat!)
About a dozen
fresh cilantro leaves
Instructions:
Halve and pit
the avocados. Using a knife, score each
half with cuts like shown below:
Scoop out
each avocado into a bowl. Grab a potato masher and smash the avocado. Add the rest
of the ingredients and mix until everything is incorporated. It will be chunky (the chunkier, the
better!) Scrape into a serving bowl,
make sure you save some for others to eat, too.
